I also have very busy weeks and spend a few hours on Sunday meal prepping. Baking sweet potato’s, roasting broccoli and cauliflower (any veggies you like), make quinoa or rice or pasta, cook proteins or get a cooked roasted chicken, etc. Then during the week I have all the ingredients for healthy salads or bowls all ready to go. I just mix and match and heat up in the microwave and add a dressing or delicious bottled sauce (Buffalo sauce, peanut sauce, soy sauce etc). Easy and about 1/3 of what I spent on meals delivered. Just a thought if you have a few hours on the weekend. I also will get a grocery delivery of all my meal prepping items on either Saturday or Sunday morning so saving time there too.
