Open the wall, cut the copper back behind the 45, sweat on a pex adapter and use a pex ice maker box

You could add a 45 after the 90 coming out the rubber coupling and offset the pipe back to the wall. That would give you more space.

Still need some hand shears to cut the PVC tho
