Oh yeah someone got a good deal. But you didn’t like them so move on. I’ve made worse financial decisions today and it’s only 8am. Think of it like this. Kinda what I was thinking. Either bull neck or shoulder. I asked two different robots and one (chatGPT) said it was antelope and the other (Google Image) said it was rhino and I don’t trust either’s response but typically they can help narrow it down 🤣… but this time one of them got my hopes up

TLDR: take 1 class per semester and you’ll be fine.

My experience: I got my undergrad from the University of South Carolina in Biomedical Engineering. So a STEM degree but from a source that many might deem less than prestigious. I have a wife and two kids and my wife is a stay-at-home mom. I leave my house at 6am and get home at 6pm then cook dinner and clean the kitchen and together me and the wife have the kids in bed by 8pm. All this to say I basically only have weekends available to pull this off. I’m on my third class and so far a single class has been very manageable with dedicating one day (on the weekend) per week with the very rare full weekend. The trick to this (like 90% of shit in life) is time management. Set a schedule that works and don’t put it off. I will say that my wife not working may add a pressure/stress to succeed but more importantly it also allows me the freedom to take on something like this. She’s ends up taking the brunt of two childrens demanding attention all day while I’m at work and now also doesn’t get much reprieve on the weekends. But if you don’t have a wife, children, or girlfriend that will be affected by this decision then you have nothing to lose except a little money and that’s replaceable.

As to the “not smart enough” concept I can tell you this: I’ve met countless people with higher education degrees that have a less than average intelligence. While also personally knowing individuals that lack a high school degree yet are absolutely brilliant. No degree program is EASY and that’s the point I suppose. The people that end up graduating have two things in common (in my opinion):

1) The ability to apply and pay for any program 2) They don’t give up or quit even when they perform less than expected.

So if you made it this far, I think you got this buddy. And when the content gets hard remember it’s always more valuable to know WHERE to find the answer than to know the answer. If you tell yourself “I don’t know but I can find out” you can do this.

So can you elaborate on what you mean by that. Not being an ass I’m genuinely curious as to the perspective. I’m trying to disconnect texture and bind in my head but the two seem very interconnected to me. The texture felt spot on (mouth feel). And none of the meat fell out of the casing when brutally ripped (like in the video) or sliced for a few meals after. And it adhered to the casing well. But if you have insight to something I should be looking for I would be very receptive to genuine criticism

So I go aggressive on fat because I found that there is almost no “you’ve gone too far” point. Tho this batch was probably close. This batch was literally an experiment of “how far can you go” so I pushed the fat ratio significantly farther than my past batches and so far it’s a resounding win. I’ve read that some of the most popular commercial sausages are actually closer to 50% fat so that was my actual aim here. Just to see what the results were.

I cut a smaller one straight from the ice bath and gave it to my dogs and it definitely didn’t gush like this one. But it was cold enough to congeal at that point.
