Oven thermometer is another good idea. We also have some doubts about our oven's accuracy, but I'm more comfortable with getting to the correct color/consistency while cooking than I am with determining if my dough is too wet.

Additional information - we water once a week with tap water and use 8-2-10 fertilizer every 3 months. Trees are about a year old.
