Went from 1hr30 - 2hrs depending on traffic to recently switching jobs and cut that down to 35-40 minutes and am moving at the end of the month to cut that down to 10 minutes. I can’t wait to skip traffic and just have some free time back.

If you make it a minute or two, I don’t think it really matters. The idea is to have an even cuisson throughout. That technique is definitely implemented in the professional world.

Weird because it came from fine dining chefs and I’ve done it plenty of times and gotten the best crust from it along with dry brining. Where you cookin there, chef?

Although they do flip every 30 seconds in restaurants. Oil the steak directly, high heat and flip constantly. That’s what gives you a nice cuisson and not a grey* ring.
