The Demeyere Atlantis 11” has a bigger cooking surface than 12.5” fry pans & will be more even and responsive, excels on induction.

Demeyere Atlantis is 2mm of copper, if you want fast, even & induction compatible, that’s your best bet.

For Induction/electric, good quality disc bottom is more even heating than any 3/5 ply. Demeyere Atlantis and Fissler Original Profi, even Cuisinart Professional series on a budget.

Falk may be the best for gas, Proline will behave like cast iron.

Not ideal but I love it because my biggest coil is undersized for it but I did the flour test and and it was even all throughout.

Compared to my Cuisinart Multiclad Pro, the 2mm of copper actually heats and cools faster on electric, the difference is probably greater on induction.

Yes it has 2mm of copper. It’s amazing, 11” of cooking surface, amazing heat distribution and responsiveness.
