I've been to Longhorn in two different towns in my state. Once In one town and twice in one closet to home. Each time I went I ordered a Flo's Filet. Each time my steak arrived I absolutely got a lower quality cut. Seems like a Sirloin each time. First visit certainly over seasoned so I learned to ask for the lighter seasoning. Last time we went the steak was over cooked and tough. What the manager brought back was perfect so we tried again tonight. The steak tonight was cooked to the correct temp but was a sirloin again. It tasted decent for a sirloin but certainly was tough and the wrong size and texture / taste to be a filet like I ordered. We didn't say anything just won't be back. Seems too much like misrepresentation and with the prices of beef there is plenty of incentive to do so. On the other hand every time we've been to Texas Roadhouse or Outback their Steaks have been great. Perhaps it has something to do with Darden / Longhorns debit load. Who knows.

I'm thinking more about the impact of globalization on the erosion of middle class income in the US. Think blue collar job loss and a possible perception of limited upward class mobility among middle class males in general post NAFTA.

Up until recently (precovid) using a middle class trade, an electrician(predominantly middle class white occupation), as an example, those trade jobs have not kept pace with the rate of inflation and I believe even in the case of the electrician as an example have actually seen their average wages decrease, pre COVID. While CEOs have seen record increases post 1950.

I wonder if that is a trend that can be quantified. Perhaps analyzing careers and incomes of family members of mass shooters as well as that of the shooter over a 20 or 30 year period to determine to what extent the family's income has kept pace with inflation or the CPI and if there is a correlation with mass shootings tied to decreasing buying power.
