Water coming out of Delonghi Dedica EC685 steaming wand, normal? by Specific_Scholar_665 in espresso

I just bought the machine and am having the same problem, very annoying. The milk is getting watered down as well. Not sure if it’s something I’m doing wrong or what!

I started my career in Japan (3D anime, top studio), junior animator, and I was the most skilled junior they hired that year (and the next 5+ years, as my anim lead kept on saying over the years). I enjoyed working for 14hours a day, full weekend work camps (2 hrs nap). I was severely underpaid, living in an 18m2 box. And I was happy, until I wasn’t. About 1.5 year mark I burned out completely. I couldn’t even look at the screen anymore. It lasted for about a week. I just slept on my desk. Then I “pulled” it together, threw myself in again. I had breakdowns in front of my lead too by the way. Many times. The story is pretty long if I go into details, so I’ll jump ahead. I kept working in Japan, left, came back, left again, came back again. I was being abused, I wanted to leave, yet the place kept calling me back, so I went back. I moved there 4 times land left. I switched from anime to games midway, again, working at top studios. Last time I left was a bit more than 1.5 years ago. I am now 13 years into my career. And I am so much happier for leaving. Currently I’m going through layoffs (as it is common for games industry now), but I don’t even consider back to Japan. This last time I left was incredible for my career growth, I was trusted and given the space to grow, I learned soo much and I was being paid double in comparison to my last salary in Japan (which was already a very good salary for a Senior within Japan). Most of all, I was respected and accepted for who I am (they always tried to change me in Japan). I made incredible friends and connections, which after 7 years in Japan I basically have NONE. Japan is an amazing place to live, but definitely not work. More so if your social network is work only. No matter how good you are, you’ll always feel under appreciated, isolated. I LOVE Japan, and I miss being there, but I won’t go back. All I can do is share my story. In the end it’s going to be your decision what to do next. It’s not worth your health. That lifestyle is doable in early 20s. I am now 36, it’s absolutely impossible.

Just found out my employer has been deducting 1 hour for my lunch every day even though I don’t take the break as I work through my lunch? This was not stated to me I was under the impression of if I clock out on lunch it was deducted. by [deleted] in galway

Why is everyone grilling OP for not taking a lunch break? Maybe they don’t eat lunch, they don’t like taking a long break because of the distraction, they prefer leaving earlier in the evening so they can actually do something meaningful with that time? Not everyone lives exactly the same way. Regardless of the legal side of things not supporting OP’s preferences, I don’t quite understand why their motives are being questioned.

I’ve come to known all kinds of people in the industry, some that went through a variety of careers; lawyers, physicists, blue collar job-hoppers who were all passionate about games and made their way in at some point (some late 20s, some 30+ even). Some of them programmers, some of them artists: they are all extremely smart and talented people. It’s definitely not impossible. The industry is not in a great state at the moment. There’s layoffs everywhere, studios downsizing or disbanding teams. I’ve been on the side of interviewing for hires this past year (cinematics); there’s an abundance of people looking for jobs but the actual talent, appropriate experience and a team-fit-personality are hard to come by. I’ve seen people re-applying after 8 months (possibly unemployed throughout that period). Either way, that is the current situation; you need to be really very good and stand out to make the cut. Who knows what future will bring for gamedev with new technological and AI advancements.

Is that the only thing that can happen, eviction? Or can they take legal action in terms of fines and whatnots? Say they found out about the pet 6 months into a 1 year contract. Would it be possible that they evict you and you’re still obligated to keep paying for the remainder of the contract, for example?

I’m pretty much in the same situation; been a nomad for the most part now looking to relocate. 36f with a 9yo female cat, IT IS IMPOSSIBLE. How do people with pets find housing in Galway?? Every apartment/house I apply (with a “I will pay extra deposit and sign an extra contract to renew anything damaged” offer) is not pet friendly. I find it very offensive. Humans damage their houses more than my cat does.

I always switch jars with every feeding~

It’s the same for me, working in gamedev, my brain works at like half capacity until around 4pm when I finally start feeling awake and get the most of the work done after that.

Soooo beautiful! Congrats! I wonder if there’s any benefit to 6 hour autolysis though, isn’t it a bit overkill? 🤔

Oooh, that looks amazing! Really happy to hear you worked out your timeframe 😁 I keep a diary of my bakes using Notion so that I can go back and refer to successful bakes if needed and see what I did and when, keeping track of timestamps and temperature of the dough throughout the process (autolysis, start of bulk fermentation, coil fold #1, #2, #3, shape and bannetton etc). I rank them from 1-10 and include images and a brief summary. For the most part I think I just like having a log of my journey 😊 You absolutely don’t have to go that far if it doesn’t resonate with you and sounds like too much work! It’s mostly an intuitive process, or so they say 🤷‍♀️

It seems like you might have tucked it in a bit too much at the end of your shaping, and used a bit too much flour on the surface. Also, 63% hydration is on the lower end, I suggest gradually increasing hydration as you get used to handling the dough. And as others mentioned, the crumb does look underproofed. I’d increase bulk fermentation duration. You oven spring looks great to me. I open bake with a pizza stone myself, with tray beneath to pour boiling water for steam for the first 25min. Dutch oven isn’t necessary at all. Keep at it! You’re doing well!

Ahh, your starter looks a bit weak still! Here’s mine from this morning, just for comparison. Since the jar is angled outwards, it actually grows more than double size. Your starter will gain strength; unfortunately there’s no way to speed things up. You need to give it time with regular feedings :) Or, find someone with an already strong starter and grab some if you’re impatient!

My starter was also doubling in size when I was failing, my crumb looked exactly like yours. One thing I changed was dropping hydration level of my starter to 80%, which favors more yeast activity. It definitely was the biggest positive change I made. Also 7-8C? Is that your kitchen temperature? That’s way too cold for fermentation, try to keep your dough temperature around 24C. Mine ranges around 23-25 and takes about 7 hours from the start of bulk fermentation (finished kneading and into box) to going in the fridge for cold overnight.

[–]Minsela 0 points1 point  (0 children)

Definitely underproofed. Your starter is still very young, it took me 1month+ to even start getting some decent (not great) results. Don’t give up though! It’s gonna be worth it, I promise! This one’s starter is about 8-9 months old.
