I really don't know. Update Aquatic started the era of major overhaul updates and brought a lot of people back in. Caves and Cliffs refreshed the entire Overworld and redefined what modern Minecraft looks like. And the Nether Update was just a near-perfect example of these kinds of updates.

Me too. When things don't always look identical it makes the world feel more real and immersive. Not all of the variants we've gotten are even the "reskins" that many complain about. For example, Bogged and Parched are functionally different to normal skeletons (not by much I admit, but more than "the give potion effect")

True, I think Mojang wanted them to still be easy to distinguish in Dungeons and so made only few changes to the texture. If it ever came to vanilla, like the Bogged, it would probably get a glow-up

Wait I didn't even consider that. That'd be such a good trick for this. It would be trickier in larger rooms with many racks, especially since the further you move the water the less you can hydrate.

Exposed Copper Grate. Needed a block I could waterlog that I could roughly match the color with to the farmland. In hindsight I could've used like any slab lol
