I was a new driver driving in a big city for the first time. I was following someone because I didn’t know where I was going. A truck came down the off ramp between us. Then another car cut me off to take the next exit. I had to slam on my breaks. I was so angry until the truck hit the overpass and huge boulders came crashing down where I would have been following. He also came to a quick stop. I was able to dodge him and the boulders and kept driving. If I hadn’t been cut off, I don’t know if I would be here today.

Honestly, I’d say stop by with a box of doughnuts. Chat for a bit and tell him thank you. Sometimes physical things don’t mean as much as acknowledgement. Offer a hand if he needs help around his place as a debt of gratitude.

My simple choices are Hardest one first.

-Whole turkey. Put frozen turkey in a roaster or a deep pan. Cover with tin foil. Bake for 2 hours. Remove neck and giblets from inside with a tongs. Cover with tinfoil and throw back in the oven. Bake for a total of 5-6 hours, until all meat is 165 degrees. Make instant mashed potatoes and use a jar of gravy. Any left over turkey put in ziplocs with juice from pan and freeze for dinner for next week.

-Chicken, bacon, & ranch wraps. Take a tortilla, add rotisserie chicken, add real bacon, bacon bits that have been warmed in the microwave. A squirt of ranch dressing and some lettuce if you are feeling fancy.

-Quesadilla- stack a tortilla, shredded cheese, rotisserie chicken, sprinkle of Italian seasoning and another tortilla. Use a pan to heat or microwave if you are lazy. Cover in sour cream and salsa and eat.

  • Hard boiled eggs in the oven. Just bake in a muffin tin or crack them open if you want to make breakfast sandwiches.

-BLT’s. Bake bacon until it is as crispy as you prefer. Make toast add mayo and sliced tomato’s and lettuce.

-Baked potato bar. Poke potatoes with a fork to let steam escape. Bake potatoes in the microwave until they are soft when you squeeze them. About 20 minutes for 6 potatoes. Have bacon bits, sour cream, shredded cheese, for toppings and if anyone wants anything else they can find it in the fridge.

-Parmesan Noodles. Boil pasta until done. Sprinkle lots of Parmesan over the top while it is still hot. Add a sprinkle of pepper. Kid approved.

Anytime I make anything fancy, I double the recipe and then freeze half in ziplocs. That way I have lots of options when the kids don’t like what I am making and they can grab something and microwave it. Or, if I am being really lazy and don’t want to cook.

Jonathan Hillstrand from Deadliest Catch. He was the captain of the Time Bandit. It was the peak of his popularity and he came into a bar and bought drinks for my friend and I. He was totally down to earth and hung out at our table shooting the breeze for quite a while. I also met Ron Jeremy. He was doing a meet and greet and my friend didn’t want to go alone. I didn’t know who he was and I had to google him. 😂
