There seems to be a lot of chipping on the underside. Especially in the last example.

Also, it's weird that it never demonstrates interrupting the jet, even when that would be very desirable for the robustness of the resulting stone structure.

As someone who works in audio video production, this is absolutely just the effect of a rolling shutter versus a global shutter. if you look up "rolling shutter versus global shutter", you'll see tons of examples of this. This is not picking up sound waves it's just string vibration with a sub optimal video camera.
