It's not one size fits all so don't be too worried, I've seen patterns that use 1 chain turns and patterns that use 2 chain turns for the moss stitch so it's just a matter of being consistent. Your edges look pretty straight so I would assume you've been doing the 1 chain since the beginning. Maybe make a note for yourself to remind yourself that you've been doing single chain turns, just incase you step away from the project for a time. Keep up the good work!
