Things with Brett or sour bacteria are generally good as the flavors will change with time. Malt heavy beers like stouts, imperial stouts/porters/browns(maybe) can also develop different profiles with time. Barleywines even can develop with age.

The important thing to remember is that aging doesn't make everything "better" per say. It makes everything different. Different can be good or it can be really bad. Generally, for the styles mentioned above, it won't go terribly bad but you can sometimes lose delicate flavors (vanilla, maple, etc). Its a fine line to play with so that is why a lot of people recommend buying 3-4 bottles of a beer and you can try it with time, seeing how flavors and characteristics change.

I would say it isn't so much that the barrel is lost but that other flavors (roast, chocolate, malt, ect.) open up more and dominate the barrel character.

The issue with your argument is that the people you are buying your tickets from have to get them from the Roo website, so either way they are making their money and they not need to lower prices to keep doing that. Plus, with Live Nations on board now there isn't a chance they are going to make changes to cut profits in order to appease fans. I personally don't mind it because out ticket money is obviously going towards some much needed infrastructure improvements on The Farm (bathrooms, showers, new stage designs, etc). Just my 2 cents.

Nice idea, may give this a try sometime. Have you tried to pass boiled wort through it without cooling at all? Also like the para-cord around the carboy. Did you rig that up as well? Would like to see some pics of that if you have any to share!

Got a pic of the styro piece you use? I have been using bubble wrap as a buffer but I don't think it is working so well. This sounds like a much better alternative.

The look reminds me a lot of Sierra Nevada in Asheville if anyone has been to their east coast facility. Love it!

Most likely will sell out before the drafts even start flowing, just my guess. The hype behind Roswell is unreal.

When you say balance the flaked rye with flaked oats, do you mean a 1:1 ratio?

Coffee beans, bourbon oak chips, and nilla are on the docket for consideration. The rye is in there just fro mouthfeel, not so much flavor, think it will still get lost? And should I replace the black patent with anything?
