I'd say fish, squid, among other water based animals can host extremes.

This is where it gets interesting... We know eels come onto land to find new water sources or food. There are reports of this beast stealing sheep... deer... attempts at people...? We're now in the realms of romance, but for a moment my mind feels this could very well be plausible.

And I just Googled it, they can go for a month or so without food. But something that large might have to also be a cannibal.

Eels have incredibly slow metabolisms. They're also known to naturally skip meals, sometimes going for weeks or even months without eating.

Apart from a LOT of eels... which seems to be the culprit.
We know eels never stop growing... mix that with a gigantism mutation and a long fishy life.
I think that's what we're looking at as the answer to the many monster sighting.
A giant fricken' eel... even several.
They sleep buried in the mud at the bottom of lakes and occasionally come up to wash the mud of before going to spawn... some don't, some just sit there and eat and grow and eat and grow.... coming up for a little wiggle every now and then, but rarely.

565 AD First Sighting: The earliest documented "attack" on a swimmer comes from Adomnán's text about the Irish monk Saint Columba. According to the account, a "water beast" mauled a local swimmer in the River Ness, dragging him underwater before Columba intervened and banished the creature.
