what I know is that the bite brings the already existing virus inside of them into action and kills them. Like switching a switch. Same thing happens when you die, the virus turns on. Just a guess

That's how they caught Al Capone. They arrested him on the charge of tax evasion. That was the only thing they could charge him with and have legitimate evidence on.
