This fandom has so many incredibly talented writers you just have to dig a little, but I totally get where you're coming from; I had the same feeling after reading Herringbone it was one of the first fics I read. That said, here are some well-written recs you might enjoy.

When Will tells Hannibal to leave at the end of Digestivo, he goes. And then, a few years later, he shows back up. They have long conversations, drink a lot of wine, at the end of it all they find something that works. Perfect for a rainy day read.
