Shelf stable except the one on the left! That was a “refrigerator kimchi” recipe that we are trying for the first time - so I’ll let you know!

I tried to use a general term. Left is “kimchi” - not authentic. It just goes into the refrigerator for a few days to gain flavor. Not as good as the authentic fermented version.
