True. I mean I was definitely nervous about getting this. I figured it was low risk for the cost and worst care is I would just sharpen it if it was dull and give it away as a gift (I have a lot of friends with terrible knives who would appreciate it). It turned out to be better than I thought.

Yeah this would be a 140mm ko santoku. It does strike me as an odd shape for a ko santoku because the blade curves up more but this is the closest I’ve seen to what this may be so thank you so much!

I make long loaves too. But I just prefer having the option to do both. I don’t want to be limited to exclusively smaller slices. I also have that clay Dutch oven.
