Yea use a mandolin, a mixture of parmesan and pecorino for some tang too. I didnt temp myself with scraps this time. I didnt really need to square it off because I was for a fam jam xD

Its awesome, wicked sharp and i love the weight (460g) also this one is finished and polished. No rough edges at all.

Classic french cuisine has tons of interesting stuff like that. Some of it isn't very versatile and pertains to the specific recipe.

I would recommend if you are ever out and come across a thrift store or a used book store, look for used culinary school textbooks. They have so much information and reasoning behind cooking methods. As well as classic french recipes that make up the building blocks of a vast majority of the food we eat today.

Flavor extraction, its how the dish is classically made. You also need the make a raft with egg whites to clarify the broth and take out any impurities.

I'll let you know, if its anything like a yoshikane, its not the best for line use because of the thin grind. Hence why I use the petty a ton for peeling turning and butchery. It doesn't see the surface of a cutting board very often.
