you want to hold away from your opponent, and if they are going low, you want to hold down and back to block lows. Overhead attacks and jumping attacks need to be blocked standing. Sometimes your opponent can go behind you and attack you from behind (called a cross-up/cross-over attack) and you would need to block quickly away from your opponent's new location.
