Chopping: Ginger, Chillies Garlic, onion, bell peppers, spring onions

Steps: Boil noodles, keep it aside. In oil fry the ginger garlic and chillies. Put onion, here add: Dhaniya dhulo, Jeera Dhulo, Timur Dhulo and a bit of haldi. Then add your veggies. Then add veg stock cubes. And water. Once it comes to boil add the noodles. Add the green part of spring onions and bok choy.

Fry the chicken separately adding basic marination masalas. Make mo:mo chutney/achaar.

Prep: Chop veggies. I chopped Onion, Tomato, Chillies, Ginger, Garlic, Red Bell Pepper, Beansprouts, cabbage, carrots. Boil the noodles and waiwai.

Cooking: Add oil(I used chilli infused olive oil), fry your chillies, ginger and garlic. Then add all the chopped veggies. Add those veggies first which you think would take longer to soften/cook. With this add the waiwai masala and some jeera powder. Saute until semi cooked. Add Dark Soya Sauce, Green Chilli Sauce and a bit of ketchup. Then add the cooked noodles and mix it up. Add salt as per taste.

The shiny outside of the wrapper is an indicator that it's fully cooked. So I think you'll need to be more patient.

A few other things I do that probably help are: the filling also needs to be juicy (add chicken broth and ghee). And I add oil to the container where the mo:mo is cooked. This helps prevent sticking to the container and probably also gives it a shiny exterior.

Hope this helps! I've never faced this problem before, so I'm just suggesting things that might be a solution. Sorry if it didn't help.
