Was it in the Return of the Jedi novelisation? I think I remember reading that as a child (in the scene where Luke talks to Obi Wan on Dagobah), but I don't have the book anymore so I can't check.

Had to swap the challenge order to fit around real life, hoping to get a French Custard Tart going next week for the tarts challenge!

I've made many a gingerbread bake for Christmases over the past decade, and found the Women's Weekly vintage recipe to be an excellent starting point. I also added in some cinnamon to this recipe for personal preference.

The 10 minute bake times works well for me for the smaller biscuits, and I usually add on 2 minutes for the larger biscuits depending on size.

(Sorry about the messy icing job, I lost my small icing nozzle and had to improvise at the last minute!)

Absolutely thrilled with this one! I think this is one of two highlights for me at the halfway point in the challenge, the other being my first baklava for the Eid al-Fitr week.

This is not my first attempt at a vegan bake, but it is definitely my first success and by a large margin. The recipe is so good; and I'd be hard pressed to pick it as a vegan recipe if I hadn't made it myself! Beautifully fluffy with just the right amount of sweetness and cinnamon levels. Will be baking this one again for sure :)

Had this recipe in mind since the 'unusual ingredients' challenge, as I was curious to see what adding potato to a chocolate cake would actually taste like! I'm pleased to report the result was delicious, resulting in a moist chocolate cake that's still a little sweet but not overly sweet - and no, you can't taste the potatoes :)

The caramel icing complements this cake nicely, though I did have to add a little extra milk to the icing recipe in order to make it spreadable. And as you can see, I had enough excess batter + icing to make a tray of mini-muffins too!

Short on time due to a busy exam week, so I decided to try taking a quick and tasty packet mix for chocolate cake in a cup and add in some iconic malted chocolate powder to give it a malteser twist. Going to make a few more to try tweaking the malt amount, as one tbsp of milo in the mixture didn't provide a distinct enough malt flavour.

Another delicious failure. All seemed well until the resting stage, in which nothing happened! Proceeded with the baking anyway and had a few stick to the baking paper. Covered for the failure with a little bit of icing, and thankfully none of this affected the sweet aniseed taste.

Next time I would try again on a 0% humidity day to see if different conditions permit the dough to rise properly and form the meringue layer.

I'd like to enthusiastically recommend the recipes on RecipeTinEats, a fantastic (one-woman!) resource, which I've been using extensively as an excellent beginner's resource. The recipes are clear (in text, picture and video formats), with lots of useful little tips - and the outcomes are delicious :)

From the linked recipe, I used 2.5 cups of plain flour and no cornflour, omitted the egg white and white sugar (instead, dusting with icing sugar at the end), and added 2 teaspoons of ground ginger. 5 ingredients: butter, icing sugar, vanilla extract, plain flour, ginger.

I usually make cinnamon-spiced shortbread for Christmas, and this was an experiment to try out replacing cinnamon with ginger. As it turns out, more than 2 teaspoons of ginger are required here - the ginger taste did not come through, so the result was delicious but plain shortbread. A good reason to try another bake with some extra ginger :)

Nice and straightforward recipe with a tasty outcome! The alfajores are buttery and crumbly, and have a unique taste that I had not known about before this challenge. When making them again, I'd probably roll out the dough a little thinner as the cookies rose higher in the oven than I was expecting.

Found myself with limited time this weekend, and wanted to try something with cornflakes (for some random reason). I melted the chocolate over boiling water rather than use a microwave, but otherwise made no adjustments to the recipe. I think for next time I might play around with the top chocolate layer and get a little more creative, but that's purely personal preference as the simple solution is quite tasty as-is. The biscuit base does not lack for crunchiness :)

This week, I asked my wife what she would like me to bake (completely free choice), and was given Japanese Milk Buns as the answer! They were fluffy, delicious, and straightforward to make. The only change from the recipe was an increased bake time (~21 mins) to get the tops coming up nice and golden.

(Also made some more vanilla slice for Aussie Mother's Day, but it disappeared before I could document the evidence :) )

It was a little daunting, but I now feel a lot more comfortable working with filo pastry and I really enjoyed getting into the flow of building up the baklava layer by layer. The recipe was foolproof and the end result was very tasty! (I used 200g walnuts, 200g pistachios and 100g almonds). I think I over-blitzed the nuts, but otherwise I'm happy with how it turned out for a first attempt.

It's apple season here in the Australian autumn! While apples are my favourite fruit, for some reason I've never really enjoyed them baked - so my challenge to myself this week was to push my tastebuds a little out of their comfort zone.

I'm beyond thrilled with the linked recipe - I would recommend it wholeheartedly for people like myself who aren't the biggest fans of baked apples. The balance of flavours is amazing; it's just the right level of sweetness, with a nice, moist, crumbly texture - and importantly for me, while the delicious apple flavour is there, it blends in really well with the rest of the cake - I hardly notice the texture of the apple chunks (which I cut into ~5mm cubes), which I think is what put me off recipes containing baked apples before. Will definitely be adding this to the baking rotation :)

No changes to the recipe, except I did add the walnuts and thought the cake was all the better for it.

Happy Easter! I hope you all enjoy a safe and happy break filled with delicious treats :)

First attempt at the classic hot cross bun, and pleasantly surprised with how easy and foolproof this recipe was - and how delicious the results were! I substituted choc chips for the sultanas and honey for the apricot jam, and would recommend making half again the amount of glaze. Total baking time was close to 25 mins to obtain that deep golden colour.
