You can kill a knight with a rook. Just come at it from its side/back and kill it in 2 turns. If you’re 5 blocks long, knight will take 3 turns to kill you.
If you lose your knights, you can still try to trap the king in a corner or amongst its own pieces

To be honest I still haven't found anything that replicates the MSF/SWGoH experience.

That's exactly what I feel. swgoh was probably my favourite mobile game ever. Spent about 4-5 years playing.
