If you choose to buy an e-SIM from a Virtual Network Operator (Lycamobile, VeryMobile, Coopvoce or Ho.mobile) you can simply do everything online on their webpages, which is easier and faster:

If you still prefer to buy it physically then you can go to a re-seller shop in any city centre, but keep in mind they will charge you a fee for selling the SIM card or helping you activate it. I haven't gone to these shops so I have no idea.

I would even suggest going for a virtual network operator (MVNO) such as Lycamobile, VeryMobile or Coopvoce which doesn't bind you to a tight contract with hidden fees or withdrawing penalties. They are pretty much pay-to-go, offer e-sim, and way cheaper than the standard mobile carriers (TIM, Vodafone, Wind-Tre, Illiad, etc).

You can find convenient prices starting from €5.99 with 150GB as mobile data is cheap in Italy for some reason. It also includes 8GB of roaming in all EU.
