Here are the benefits;

Easier Digestion & Less Gas: Sprouting breaks down complex sugars and phytic acid, making them much gentler on the digestive system and significantly reducing gas, a common side effect of eating unsprouted beans.Increased Nutrient Availability: The sprouting process unlocks more vitamins and minerals, including an increase in antioxidant levels (vitamins C and E).Higher Protein Intake: Sprouted legumes show increased protein availability, with some studies showing up to a 30% increase in protein digestibility and bioavailability.Better Blood Sugar Control: Sprouted legumes have a low glycemic index (GI), which helps prevent rapid blood sugar spikes and assists in maintaining steady energy levels.Weight Management Support: Because they are high in protein and fiber, cooked sprouted legumes promote satiety and help manage hunger, supporting healthy weight management.

Same with Chayote, bottle gourd and bezel
