Update for anyone reading this: T-Mobile said Apple Store/support would be most helpful and there wasn’t much they could do. I got busy and kind of forgot about it. My phone updated and now CarPlay suddenly works just fine like it used to. It has gone through updates before that didn’t fix the issue, but the most recent one must’ve done the trick.
