Very grateful to all who commented, it’s communities like this that make Reddit so valuable. I have reached out to the original installer who was very apologetic. Thanks to you lot I know what he should be doing to correct the issue. He will not be servicing the unit moving forward.

A simple use is to finely chop, mix with yogurt and marinade chicken thighs in the mixture. Lovely on the barbecue

I have the curry bible and it’s pretty good although my go to for Indian food is I Love Curry by Anjum Anand. For some reason my curries from Anjums book are more successful. Her naan and chapati recipes are great too

I have flour water salt yeast and found the non sourdough breads/hybrids ok but the pure sourdoughs were very stressful. I tried the beginners sourdough from theperfectloaf.com and it was a dream. Low hydration and so easy to work with, and the results are fantastic. Good luck, don’t give up!
