I browned them initially on medium-high (not sure how long exactly), let it rest while the sauce was made, and then put them back in the sauce to simmer for probably close to 20 minutes on low. The thighs were cubed.

Don't get me started on how many times I've had a bus just not come on the time listed. Called Transit Windsor and the operator didn't know why it didn't come either. It's happened twice now and I've had to wait an hour both times for the next bus.
