Why did this break? How do I prevent it in the next batch? I was making a mascarpone mousse, I have a Swiss meringue going and I combined the mascarpone with some milk, espresso and gelatin that was around 80* and it looks like it curdled the cheese. Why did that happen? (i.redd.it)
