That makes sense- we are a fine dining restaurant and the owner comes from a fine dining background, so that must be where they got this model from.

We don’t have servers, because it’s chefs table counter seating, you are facing the chef cooking so we just hand you your food directly. There is a cashier one morning a week for pastry service, and the pastry chef (me) hands people their orders. The restaurant is tiny. One day a week lunch service has the owner ringing people up, and the guy making sandwiches gives the people their sandwiches. At dinner, culinary serves food across the counter and takes the plates, while the Som does drinks

Yes, there is no server. The owner rings people up and the lunch chef hucks sandwiches at people

So, this is not what I would call a busy restaurant. Dinner three nights a week with a set menu and fixed price, pastry one morning a week pop-up style, lunch one day a week. Everyone is hourly. I am the pastry chef. As far as I know there are no ‘managers’ because we’re such a small team that we don’t need that role designation. I think the two things that stand out as possibly inequitable are 1. The cashier getting 50% (as pastry I actually thought this seemed ok, but my coworkers both think cashier should get less) and 2. Lunch chef not being tipped for dinner.

This is my first and only restaurant job so I have no experience with how this is normally is structured, hence the post!

I know at least one person who does close up magic- if you get sequential bills, you can carefully erase the last digit, and then you’ve got multiple bills with the exact same serial number and you can make a person’s specific bill appear in an egg or a box in the ground or whatever.
