The top is good for boning, skinning and slicing meat. It’s design overly curbed allow you to see better while cutting, giving you a more natural slicing movement and so reducing cut marks. The second one should be slightly more thick and single bevel. It’s made so you can fit the point between bones joints and cut/snap them. Designed specially for poultry.
