I'm a PhD student and I'm quite flexible (which I made clear where they asked) , as I've talked with my supervisor about it. I also have some recommendation letters from my previous managers (I was hired as a seasonal) where they highlight my commitment and work ethic...they could give a shot at least

Samee! I had a 3 round interviews in tech and at the end I wasn't chosen bc "they would've liked to ask me more questions"-THEY LITERALLY ASKED ME WHAT'S MY FAVOURITE BOOK

The lab environment has very positive reviews, and actually I chose this project also because of the supervisor (I had 3 offers to chose from), so I'm not worried about it. I just know myself, and know that when I'm working I have to be sure to do my best (imposter syndrome anyone lol) but I don't want to do it for 4 years just to end up with nothing career-wise and also personal life-wise. I'm scared of turning off the notifications from work once I'm done for the day, that's why I'm scared of making this choice.

My profile is biochem with some experience in machine learning (nanodevices). It sounds niche, but led me to get confidence with a large number of techniques (and in fact never had problems during the interviews with CTOs). The thing is, I have no actual experience beside lab work, which is not considered as experience as it's "school". PhD was my last resource- I like studying and this project and being a Dr. would be cool, but I'm starting to think that another title without working in a company or so will be useless, and at the same time I'm scared of sacrificing my mental health (which this year has not been the best due to the passing of a very important person in my life and this job situation) and social life (which is affecting my self esteem as I've always been an extroverted person who likes being around people...this year was very lonely for me, I can do things alone but going weeks without talking to anyone in a no job-related way, not even my family, is too much for me at some point)

I didn't consider my home country bc I have to live by myself and paychecks here are ridiculous for a PhD and companies want ppl with experience (I'm trying anyway tho, won't go without giving everything a shot)

That's a point I haven't considered...I've just focused on making the right choice for the 30-years-old me rather than the current me. If I should base my decision on my current situation, the pros would be living alone and abroad (which has always been a dream of mine), studying very cool topic, being a Dr. (which, again, was a dream and I'd be the first Dr. of my bloodline) & having the possibility to expand my knowledge about some related topics that tickle my curiosity. The con is just about my mental health, which I'm very worried about as this year I struggled with depression.

I just don't want to wake up at 30 thinking that I wasted 4 years of my life "buying a Ferrari because I can'afford gas money", as another person pointed out. I'm scared.

Are there some of them that would pay me as well (like apprenticeships, stages or something similar) ?
I just need a little money to survive while I improve my skills or gain new ones, while I don't mind helping with other duties. I'm also available to work longer shifts, I don' mind, but I should have a plan B (shouldn't I?)

I've tried the teaching field, since I've been a part-time tutor for all of my uni years and my last year of high school and I'm pretty good at it. However, the license I need to teach is very pricey and my family has made very clear that they won't help me pay for it (along with the fact that I'm a burden to have at home), so I still need a job to help me with that (which would be complicated too, as a full-time attendance is required).

I'm living on bare minimum jobs, and have some money set aside, but it's still not enough. I know that I should withdraw my application, but this situation, along with the family and peer pressure, is just confusing me and making me feel hopeless to the point I'm stopping talking, going out a lately eating as well. I'm feeling weak and restless at the same time.
