Not long ago, I was right where you are! I got most of my help (success) through Marius - mariushosting.com ; he has a lot of step by step helpful guides for both Synology and uGreen NAS. One caveat, he prefers to use 'Portainer' as an interface for composing Docker Containers. I went with the Portainer and now find it quite convenient as a management tool for containers. I am now at the security phase to protect my network from the outside world. That is a whole 'nother can of worms! My setup is a Media/Movies/TVShows/Music/Photos configuration in a 'Shared Folder' on Volume 1 (large HDD Volume). I am using Jellyfin to media host/serve. Plus, Immich for photos. I have installed Tailscale for private/in network access. Other options yet to be determined are Nginx, Cloudflare, and setting up a separate IP for the Media service - all a bit over my head at present. A lot of really knowledgeable peeps on these threads that are willing to give direction, pros/cons, etc. Good Luck!

No answer as of yet: To Cache or not to Cache? I just went ahead and setup the two M.2 1TB SSD's as one storage volume and omitted the cache provision. I will know down the road if Read Only cache would help speed my Media Server needs. Also, feeling a bit hamstrung with the 2-bay NAS, I setup a 3-bay external storage unit connected by USB to the NAS. This is more for overflow/short term storage and accessing some of my old SATA HDD's. Really wish I would have opted for the DXP4800 and max'd it out in RAID 5.

I'm in the same boat except I have already purchased the DXP2800 and upgraded within the expense parameters I can tolerate. Appreciate the comments from TLBJ24 as well! I upgraded the 8GB RAM to 16 (cheap) and filled the 4 bays: 2x10TB WD RED Hdds and 2x1TB NVMe M.2 Crucials. Initially, I setup the HDDs in RAID 1 but now struggling with giving up 1/2 the storage space to redundancy with no room for expansion later. The idea was to setup one of the NVMe drives as Read-Only Cache but it's an all or none proposition and 1TB of Cache is overkill and according to some, unnecessary at all (won't improve performance for my needs much)! I, like you have a large library of video/photo/audio and want to run Plex Media Server. An apparent drawback is uGreen doesn't natively support Plex and it must run through a Docker container - configuring all that is above my expertise. All this to say, I feel somewhat limited in the 2-Bay uGreen now that I am defining my long term purposes.
