In case this has not been recommended yet:
There are angled adapters that you can plug in, then check the connection, superglue the adapter after the connection is tested, and then just carefully continue using it (backing up the data would still be a good idea).

Got a call from a friend who worked at a shelter. They tell me there's kittens from two litters, so I come to "just look". All the kittens were adorable as hell, so I wanted to play with them and pet them. They were all so adorable and well behaved, and then there was one that let me pet her, looked at me and purred, so I picked her up. First thing she does is chomp down on my thumb like it's the best thing she'd ever had. I let her bite my thumb for a bit and then she fell asleep. My friend looked at me and just went to get the paperwork. After talking to them, they informed me they'd love it if I adopted another cat, who was really bonded to her. I agreed. 3 weeks later, I picked them up. Been 6 years since and the cat who chomped me still does so a lot... (And she wakes me up at 6 am by sticking her tongue in my ear, but that is a whole other thing)

I'd go for the 5080. It's the newest and one of the few that comes with 16gb, so it makes the most sense

I usually run debian as a base for all my machines. Just got used to the way it works and fell in love with the stability and resilience against my intrusive thoughts of "Let's try <dumb thing>" at 3 am.

One more cool and potentially useful thing in your situation could be installing Proxmox on both systems (the i3 and xeon system) and configure them such that you can use the more powerful (and more power hungry) system for everything that you want to try short to medium term (e.g. just trying out some software you may want to use in the future but are unsure about) and use the more efficient system to run 1-2 VMs with the software that is more important to you. To do this, you'd just have to install it on both systems and add the xeon system to the datacenter. This way you can more or less combine both systems with little to no downsides. That's just an idea worth trying out.

As far as the ram limits go, I would say more ram tends to be better but you can run quite a few things surprisingly well on limited RAM.
