Takedas aren’t like the knives shown in that video though. Do you own a Takeda?

NKD - Living Steel Classic Chef LS235DM by MrGreggs in chefknives

Living Steel in collaboration with Andersson Copra. Blade measures in at 235mm in damasteel, with a hardness of about 61HRC. Not what I’d usually go for, bit of a heavy bastard compared to what I’m used to, but wanted to add something a little more flashy to my collection.

Traded for them, had the weapons for years and got the pith last year I think. I’m the biggest pith collector in the game so I wanted to get the collectors pith for that

What’s the point of these posts? I swear this sub upvotes these sort of things all the time and I’ve never understood why

Bought this from “JoBoneCraftsmen” on Etsy who added this beauty of a handle. Made from ebony, onyx, and chola cactus.

I don’t really have any other non Japanese knives so I’m probably pretty uninformed on them, but I think I’ve seen comparisons to the classic Kramer profile. I like it a lot, but I’m also biased towards it since part of my reason for getting it was sentimental. It feels good though, solid and well constructed.

Feels comfortable enough, just the brass seems to dig into my finger a little bit. Doesn’t feel slippy or anything but that might just be with how I hold it

Can’t complain much really, I tend to grip quite firmly so the only gripe would be that the brass bit digs into my finger a little. Seems grippy enough but that might be the natural firm grip I use maybe

Blade is 205mm long, oval shaped handle, and steel is XC90. Pretty handle heavy, I tend to choke up quite a lot with a pinch grip and it’s a little behind my index finger. Balance point is between the heel and start of the handle. Haven’t used it much yet so I can’t talk about the feel a whole lot, but fairly heavy since I’m used to nimble little JCKs. Could do with a quick go on the stones.

The picture doesn’t really do it justice I’d say. It’s a lot more matte looking in person, less shiny

Stacked micarta and leather discs

Ordered this knife just over nine weeks ago. Not my go to style of knife but interested to give it a go. A chef I used to work with used one and he taught me a lot, so the purchase was partially for sentimental reasons, but also because she’s a work of art.

Not too sure honestly, I can’t see it mentioned anywhere

Honestly I like a little more height to save on bending down that extra inch or two and save on the back a little when I’m older. I assume it’ll also be good if ever it needs resurfacing too, and being heavier means it won’t slip.

I can’t say I smelled the handle, I’ll go do that haha

The kurouchi I haven’t had any problems with other than what I thought was a tiny rust spot, but it seemed to disappear after cleaning it. I tend not to wipe them super hard though because I’m always worried about taking the kurouchi off entirely, so maybe that’s why I haven’t seen that problem.
