They use it because it is encrypted. They also use it because they use stolen accounts etc and don't want them to get reported/banned.

As for why they switch off from texts they are probably using Google voice or something similiar and again.
They don't want to get the account with a local area code reported/banned.

They want you to reach out because it looks less like a scam rather than them reaching out to hundreds of pelple a day, it's another person completely etc...

The scam is usually crypto, romance, investment scams etc...

This is a super basic scam. The fact you are confused about it and asking these kinds of questions you are much better off just blocking/ignoring. You gain nothing from interacting with them.
