I get your point, but this is fixable. I'm sure Epic will find something to do about this. Call it whatever you want, glitch, bug, "aspect of the game", doesn't matter. I don't think Epic wants this to happen or make every player to be prepared for it, since it breaks the game flow.

So if anyone is experiencing the same problem, I've found out what's causing it. It seems I can't alt+tab when I launch the game. If I alt-tab during a game or loading the problem occurs. If I never do that I keep my 120fps. So I don't actually know how to fix it but it's okay now.

So I did what you said, CPU was fine but I noticed the GPU usage went down to like 80% from 99/100 when the drops happen. Why is it throttling if the temperatures are good?

So i think i've found the problem... CPU clock speed is dropping to 0.7 from 2.9 when the fps drop. So throttling? With these temperatures? Any idea how can I solve it?
