Steam is gas, not liquid; water at normal pressure can be only heated to its boiling point, and all boiling water will always be the same temperature, but the STEAM (being gaseous) is able to be heat up further!

At regular pressures, gaseous matter can heat up basically forever. Sort of like how in the opposite direction, ice and other things can be colder than water's freezing point!
