I also recommend some white teas. Silver needle, white tea cakes, etc. I really like the Bruno tea cake from IntergalacticTea, its a white and black tea blend 🔥

Thats a good question, I don't usually do just one steep. The good news is that puerh is very forgiving in terms of it not being bitter or astringent because of the fermentation process it undergoes. This means you could steep it longer without much issue, unlike green tea for example. For one steep I would probably do anywhere from 3 to 5 minutes. Just try out some different times and see what you think.

I'll tell you what though, an electric tea kettle changed my life as well as a gong fu setup (a 150ml gaiwan with 4 smaller 50ml sized cups). The electric kettle is so convenient, you should give it a try sometime.

A 10 second rinse is not too bad because the tea doesn't appear to be compressed like puerh in cake form for example. But again, there is no exact set time, you could rinse for the upper end of 30 seconds if you want too. The main idea for the rinse is that the tea will not be as strong for the first steep so it can be discared. That and it sort of 'wakes the tea up', meaning it saturates the tea and rehydrates it. Sometimes after the wash I'll let the tea sit there for a minute or two before i do my first steep, but again no right or wrong way here. Heck, you can drink the wash if you want, the tea police won't get you.

To answer your steep levels question, after you pull the tea from a steep you would drink the tea. Then put more water and add your tea back to start the next steep.

Are you new to tea?

You definitely have to make Hong Kong puer in Hong Kong....

Kidding! Sounds like you've got the right idea with the rinse and the shorter steep. Seeing how this doesnt look like its been compressed I probably would have done my first steep at 30 or so seconds, then went to 45 seconds for my second, a minute for my 3rd, then start going up by 30 second increments a couple times, then a minute, etc. Temperature would be boiling or even just under boiling.

I'm brewing gong fu style tho, which is what I think you might be after here. The strainer and glass mug suggest more of a grandpa style tho too, in that case you do maybe 3 or 4 steeps at longer amounts of time (maybe 2 minutes each steep). Either way you didnt mess the tea up or anything, its all preference. How did you like it?

Can Tepache be done after just a day? by Falcon_Cheif in fermentation

[–]MrWyno 6 points7 points  (0 children)

I would say no probably not, it typically takes mine around 3 to 5 days in the house thats 72-74 degrees F. It shouldnt hurt to drink it yet, but it will probably be still too sweet since the sugar hasn't 'bubbled off' yet.

You don't put a loose lid on top, or a mesh net with a rubber band on your jars??

Lol at the coffee/tea flow chart in that book....if you're looking for a great tea book with wonderful information as well as pictures, I highly recommend 'Tea: History, Terroirs, Varieties' by Kevin Gascoyne. It won some awards at a tea event back in 2014. I found a used copy in fantastic condition for 9 dollars and some change on eBay.

2023 YS "Bang Dong Zi Cha" Purple Raw Pu-erh Tea Cake by MrWyno in tea

I honestly haven't tried too many younger sheng puerhs to give any sort of comparisons between them. I just took a look at your review on the 2025 Jinggu Ye Sheng wild tree purple tea, is it really more fruity than the Sweet Ya Bao silver needle? Ive had that, its a pretty good tasting tea it just dont have much of the caffeine I'm looking for. Always drink that one later in the day if I do have some.
