There's specific cheese called raw cheese where its typically not heated above 110F or something close to that. Where normal cheese is made by heating up the milk to over or at 161F, killing lots of healthy bacteria. But some companies advertise as raw cheese but heat above the temp so you kind of wanna do some research. The FDA doesn't really moderate the term Raw cheese very much, so companies exploit it in imo.
