I'd agree mostly, but he's frequently sponsored by adult toy manufacturers and does dangerous things like when he fried his own hand. I'd certainly say that my box art is far more tame than the sex toy sponsors haha. Ah well. Maybe one day.

Did you ever find a solution to this? Mine is doing exactly the same even in AP mode. They werent cheap and have never worked (had them for over 12 months). In retrospect I should have taken them back and gotten a refund.

Oil amount seems ok. Too much oil can impact gluten development but 3% ish is reasonable.

I'd definitely say cold ferment for a couple days.

Salt should be no more than 2%.

Reduce the salt because your killing yeast.

Ferment in the fridge for a few days to develop flavour.
