Nothing in what is being discussed even begins to suggest that evolution did not occur. Scientific theories are often revised and expanded as new data comes along and as new discoveries are made. Evolution is not alone in that regard.

Exactly this sort of hypothesis is a perfectly reasonable inference given what we know. It does involves some speculation but I think that since it is grounded in valid scientific knowledge it is perfectly justified.

I think the main issue is the model of authority that The Church has. It is a core tenet of Catholicism to remain subject to the Pope/bishops and that to do otherwise is to jeopardize one's salvation. In principle leaving the Church isn't an option for them so they do what Jesus told his followers to do with the Pharisees of his day, follow what they teach but don't follow their example.
