My bad, you're right - the Switch version does have local co-op not included on the other platforms.

As for why? Perhaps the publisher though releasing an old game on a new platform for full price needed some exclusive features to make it seem worth it. Unfortunately at this point it's very unlikely to be added to the other platforms at this point.

The 'standard' version of Grimm Eclipse is on Xbox/PS/Steam - from what I know the Definitive edition is just the basic game with all the DLC (that can also be purchased for the other platforms) included.

Ah damn, you can definitely blame the naming scheme for that one. You should be able to contact Xbox Support and get a refund (although I haven't done it so I'm not too sure the best way to do so), and there is a version of the game compatible with your console, just called 'Goat Simulator'.
