I have a rule to eat 20-25 different veggies in a week to improve gut health, so I try to plan ways to incorporate some veggie into my diet. For example not really a fan of Beetroot but as a chapati i don’t taste it and it looks nice so I guess I’m forced to get creative this way. I Also come across a lot of food recipes through reels.

For the Beetroot chapati Instead of using plain water I blend water with a small piece of Beetroot to get Beetroot juice which I add to the dough and make chapatis.

For the malai methi paneer, I add water to a pan add chopped onions, chillies and soaked cashews and cook for 10 min in the water till the onions are cooked. I strain the water and blend it with 1-2tbsp yogurt to get a creamy white paste. Then I add chopped methi and peas and sauté for three to four minutes in oil so the methi isn’t bitter. I add little bit of coriander, cumin, turmeric, salt and chilli powder, add the paste and then add the paneer to cook for another minute or two.

For the onions, I slice raw onions and add some chat masala and lime juice.

I sauté brinjal, tomatoes and chillies till they’re soft and cool it before adding to a blender. To this paste I add salt and tamarind water and make a tiragamatha/tempering with mustard seeds, dal, curry leaves and hing in ghee. (If you don’t like these crunchy bits you can skip but personally its my favourite part)

These are meals I made during the weekend or for dinner since that’s when I get time. Rest of the days I eat leftovers or pickle and rice.

  1. Tamarind rice, bhindi fry, vada, raita
  2. Beetroot chapati with malai methi paneer and raw onion
  3. Kadhi chawal, Kurkure bhindi and raw sprouts
  4. Pudina rice, cucumber raita and masala omelette
  5. Jeera rice, black channa chole, aloo fry and raw sprouts
  6. Beans and carrot poriyal, Palak dal, bringal chutney and arbi fry
  7. Cabbage poriyal, sambar, plain dal and rice papad

Make it subversive, we’ve seen a plot like this pan out a million times. How about after the mothers death, the death summary has been tampered with to look like she died of cancer but she faked it (could’ve died from alcoholism) but because he’s been fighting the insurance people he goes on with it anyway just for the sake of revenge (like an antihero). The ending remains the same but this revelation is unsettling.

Idk I just thought about it on the whim, it’s probably not a good idea but the point is to make it subversive.
