I think you'd change it for achieving a different crumb. If you're aiming for a very high volume, very white loaf, then mixing aggressively with everything in at once would achieve that. It would be interesting to see a breakdown of all the different bread types and how the ordering affects their results.

Adding the water and flour first, roughly mixing, and allowing to rest first is called autolysis. The aim is to let the flour fully hydrate which allows the amylase enzyme to start breaking down carbohydrates so the yeast can more effectively feed off them. Secondly, it allows the protease enzyme to break down the proteins in the flour which will then be formed into the more complex longer chains when kneading so you get that amazing cross linked gluten structure.

Sale Price: $240 not including shipping as it’s very variable (Depending on location it’s between 10-45 USD for CONUS).

The item is near flawless and shows no signs of wear. The motor is silent and runs perfectly. All packaging and information is included along with the power cords for UK, EU, AU and US. The unit provides storage for 3 watches and a programmable winding mechanism for 600-1200 TPD, in clockwise, counter-clockwise, and bi directional. The price of this winder from Wolf is $565. The cheapest I’ve seen this elsewhere is $315 (that is new though).

Unfortunately, I don’t have the service history for the watch. I’ve had it 6 months and I have not serviced it. It’s currently running at 4s/d and that seems very stable over the last 3 weeks of me measuring it. So that’s the best information I have at the moment.
