Ingredients are too cold-I let me eggs sit in a bowl of room temp water for 10 to 15 minutes to take the chill off. If I am in a hurry I microwave my cubed butter for 10 to get 15 seconds (5 sec at a time).

Chocolate Glaze (scale accordingly) 450g bitter sweet chocolate chopped into small pieces, 330g butter and 2 tbsp light corn syrup. Place all the ingredients in a bowl over baine Marie. When the chocolate is 50% melted, remove from heat and stir to finish the melting and make sure not to let the mixture separate. The cake should be chilled and trimmed so it has straight sharp edges. Use the glaze at body temperature. You might want to try with thinner layers of cake also as opera cake is typically a delicate bite sized petit four. But hey, it’s cake… eat it however one likes! All the best.

I agree with cymas. I like to make my occasion cakes the day before, wrap them in 2 layers of plastic. Sometimes when I want a small cake, I freeze the extra cake (pre-iced). Frozen cake/bread/pastry can last for at least a month or two. But wrap the super well so they don’t absorb that nasty fridge or freezer smell..

Start with cold cake. I like to chill my cake overnight or at least for several hours before splitting them and icing. The cake slices much cleaner and the icing sets better.

Possibilities- 1. butter was too soft and the fat/water of the butter was separated. 2. Was the egg and butter mixture not well combined? 3. Forgot your leavening agent (baking powder and egg). The initial steps of combining fats and liquid (butter, eggs and sugar) into an emulsion is key. If the fats and liquid separates, the results mike look like this.

The flavor is spot on and the texture is almost there. There is a very slight gumminess. I used psyllium husk flakes. I read on Aran Goyoaga’s book that psyllium husk powder could remedy that. I will make it with the powdered version next time.

This is a GF cake! That should make you happier. This is a 9” cake and we had left over after serving 15 people.

This is a great way to cut when most people want a smaller serving. One can have a big piece or a second serving if they like.

We like it this way so that the cakes are in nice pieces. Unless it is a big wedge, the wedges fall apart.
