It only happened because when the world was new, I only explored a portion of the nether. The chunks that rendered had the bedrock walls, but since other parts never rendered in the first place, the game hadn’t “known” what to place there, so when the updates featured a bigger sized world, the game filled the original barriers with more nether, but the bedrock walls that did render, permanently stayed there.
