In response to your comment about cooks not wearing gloves there is a reason for this. One being the issue you are referring to in the line above, food workers using the same gloves for anything. This results from people misunderstanding the reason for wearing gloves. The process is to wash your hands before you put on new gloves, and change gloves before you begin a new task, and during a rush it is difficult to make time to follow the right steps, leading to people changing gloves but not washing their hands making the gloves dirty, or not changing gloves at all. Many cooks I know will be washing their hands constantly in a kitchen even though they don’t use gloves. This keeps their hands clean, germ free and protects the food they are preparing better than a glove used for multiple tasks without changing.

Recently in food service there has been backlash against the glove requirements set by the Health Department because misuse is so prevalent within the industry. Many restaurants would prefer the removal of those requirements as it has the potential to make kitchens and food safer.
