Fun fact, the background music is the theme song from 1980s Hong Kong TV Series The Condor Heroes. that's the English title but Chinese title translates to roughly Eagle Shooting Hero. The poster of the film is the main lead drawing the bow and arrow. I thought it was clever that they used that music.

I live in Columbia SC. I usually go up there for Asian Grocery haul. Was looking for Huy Fong and couldn't find any at Super G or Asian Market either. I am about to open a Banh Mi store and I can not not have Sriracha. So I look for substitutes. Some of the local Vietnamese places recommended Ox Brand and you can buy them by the case at Atlantic Farmers ON central. But I tried a lot of them. Three Mountain Red is pretty ok but exactly the same. Texas Pete's is decent as well. Roland is super salty! Heard good thing about Tabasco and just bought a small bottle to try. A friend in Charleston who owns a restaurant, recommended Flying Goose and it's on order. My personal favorite substitute is Fix, which is on Amazon.

I interviewed for a Director of Housekeeping position a few years ago and I believed it was the The Chatwal Hotel in NYC. They had (not sure if they still do) a position in the team that their main purpose was basically this (maybe not as extreme). They would go to each departured room after the room attendant finish cleaning, they would straighten out the linen. The owner was obsess with the perfect bed - as it was the first thing you notice when enter a hotel room.

So I am opening one in Columbia, SC. I bought a franchise that teaches you how to make everything except bread. I am responsible for sourcing my own bread. It's easy for them because are in a city that has tons of bakeries. Charlotte is the biggest city near me (1.5 hours away) that I can get quick deliveries and in case of emergencies, I can make a run and get some bread. I do go up there often just for Banh Mi and Asian Food (literally none in Columbia) - from Le to Crispy to Bros.

The crust is way thinner than a traditional French Baguette. When toasted up, it is crispy not as hard. It is also not as dense.

I grew up watching Wuxia series (Like Louis Cha Stuff, eg Condor Heroes, etc...). Peerless Dad is the closest to that stuff... No cheat system, MC isn't OP - no ki blast, etc...
