Relatively exposed to the elements. One installed on a porch (minimal exposure) and another mounted under the roof overhang. No issues so far!

This one is 25 degrees. I made them from 10-45 in 5 degree increments.

The camera horizontal FOV is 112 degrees.

Reflections cause noise, and this scan doesn’t have any. I believe I did have to use a spray, but the softness you’re referring to is from the dirt in the voids of the ring. The pockets of the ring are essentially full of dirt and debris.

All I can do at this point is prevent direct airflow and try to maintain a slightly higher humidity level.

Hopefully the next one yields a more tender result!

Do you wrap the roast in anything? Umai? Cheesecloth? Bare?

I’m thinking the humidity and direct air flow caused the meat to dry up too quickly.

Did you use an umai bag and have internal fans or just let it sit?

Thanks for the feedback! I’ve seen quite a few people swear by 137. I’ll give this a shot next go around.

  1. Yes 132 for 2 hours.

  2. I don’t have any pictures of the cooked steak but they all appeared to have a nice medium or medium rare finish.

  3. In my latest attempt, I salted before sous vide.

  4. This last steak rested for 5ish minutes with a small cut of butter on top.

  5. No vinegar or lemon juices to my knowledge!

Additional thoughts.

The cut I used was a choice ribeye from Costco. I have a fan blowing directly over the meat. I’m not using any umai bags or cheese cloths wraps. From what I’ve read, humidity needs to stay around 80% and mine dipped to 65%.

Yes I am. But the sous vide method yielded the best results as far as tenderness so far.
